Justine Schofield's Delicious Sausage & Lentil Ragu

Ingredients

2 tbs olive oil

1 onion, peeled and halved

2 cloves garlic, peeled

1/2 carrot, peeled

1/2 long red chilli

1/2 tsp. dried oregano

4 good quality Italian-style pork sausages, casing removed and meat separated

1 bay leaf

150ml red wine

1/4 cup of dried puy lentils

1 tsp. tomato paste

700ml tomato puree

2 large handfuls of baby spinach leaves

Parmesan, to garnish

Salt and pepper

Method

Place the ultra blade into the bowl and add the onion, garlic, carrot and chilli. Chop at speed 11 for 15 seconds. Scrape down sides of the bowl. Add oil and replace with mixing blade.

Set to slow cook P1 Program. Once program has finished add meat, oregano and bay leaf and restart P1 and set for 10 minutes.  After five minutes remove stopper to add red wine and continue cooking.

Scrape down the sides and add lentils, tomato paste, tomato puree, salt and pepper. Set to slow cook P2 and cook for 1 hour 30 minutes.

When program is complete cook pasta.  After pasta is drained add baby spinach to the pasta along with the ragu and toss to coat pasta.  Garnish with Parmesan.
