Justine's Lunchbox Snacks, Oatmeal and Coco Power Balls

Serves Makes 22 power balls


1 cup of rolled oats

2 cups (400g) of pitted prunes

1/4 cup coco powder

1/2 cup desiccated coconut  + extra for coating

1 tbs. honey

pinch of cinnamon

pinch of salt


  1. Insert the ultra blade into the bowl and add the oats. Coarsely mill on speed 10 for 1 minute. Now add the prunes, coco powder, coconut, honey and salt and blitz on speed 8 for another minute. Scrape down the sides if necessary.
  2. Using a tablespoon, portion mixture into even amounts. Roll the mixture into balls (easier to roll with slightly wet hands). Coat in the extra coconut and place in the fridge for 1 hour.

Tips and Tricks

These can be stored in an airtight container for up to week in the fridge.

Really easy to make. Used dates instead of prunes. Recommend using more oates if using dates.
