1 cup of rolled oats
2 cups (400g) of pitted prunes
1/4 cup coco powder
1/2 cup desiccated coconut + extra for coating
1 tbs. honey
pinch of cinnamon
pinch of salt
- Insert the ultra blade into the bowl and add the oats. Coarsely mill on speed 10 for 1 minute. Now add the prunes, coco powder, coconut, honey and salt and blitz on speed 8 for another minute. Scrape down the sides if necessary.
- Using a tablespoon, portion mixture into even amounts. Roll the mixture into balls (easier to roll with slightly wet hands). Coat in the extra coconut and place in the fridge for 1 hour.
Tips and Tricks
Really easy to make. Used dates instead of prunes. Recommend using more oates if using dates.
