Macadamia maple biscuit slab

Ingredients

1 1/4 CUPS MACADAMIAS

125G BUTTER, SOFTENED

1/3 CUP MAPLE SYRUP

2 1/4 CUPS PLAIN FLOUR

1/4 CUP RICE FLOUR

1/4 CUP DRIED CRANBERRIES

Method

  1. Preheat oven to 170C or 150C fan-forced.
  2. Place 1 cup macadamia in the bowl fitted with the kneading/crushing blade. Mix at speed 12 for 45 seconds or until finely chopped. Add butter and maple syrup in same bowl. Mix at speed 8 for 1 minute. Add flours and mix at speed 8 for 20 seconds.
  3. Turn out dough onto a lightly floured benchtop. Knead into a ball. Place on a large sheet of baking paper. Cover with a sheet of baking paper. Roll out until 1cm thick. Cut remaining macadamias in half. Scatter over dough with cranberries. Press lightly into dough. Lift paper and dough onto a large baking tray. Bake for 30 minutes or until light golden. Cool on tray.
  4. To serve, slide onto a chopping board and invite guests to break off pieces of biscuit.
