Mustard Sauce (For Roast Pork)

Ingredients

2 PEELED SHALLOTS 

20 ml OIL

1 TBSP VEAL STOCK CUBE 

1 TSP CORNFLOUR

250 ml WATER

125 g DOUBLE CREAM 

1 TBSP MUSTARD

Method

  1. Place shallots in the bowl fitted with the ultra blade knife and mix at speed 11 for 10 s.
  2. Replace the ultra blade knife with the mixer, scrape the walls and add the oil. Start the P1 slow cook program at 130°c for 5 mins. 
  3. Dissolve the veal stock cube and cornflour in the water, and place in the bowl. Start the sauce program at speed 4 at 90°c for 8 mins.
  4. Add the double cream and mustard then restart the sauce program at speed 6 at 90°c for 8 mins.

TIP Serve with Roast Pork.
